my pierogi were great!

Thanks to all who gave me ideas on where to get Polish food stuffs.  I made my batch of pierogi tonight and they turned out really well.  Ok not as perfect as my mom's but darn near close.  Husband was very impressed - he thought they were the storebought ones until I showed him the leftover dough!  I'm feeling quite proud of myself tonight... [smiley=chef.gif]

Oh and for those of you who remember the paczki (punch-key), check out this hilarious site

If they were cuter I might consider buying one.

Now you've inspired me to try pierogis again.  I married into a Ukranian/polish family and at every family gathering, there are mountains of pierogis.  there is nothing my kids like better.  I tried them once with a pierogi maker, but the dough was too thick so I think I'll try by hand again. 

My problem is sealing them so when you boil them, the water doesn't invade.  Any tips?

Me thinks I'll do it like the cousins, getting the family involved with a few bottles of wine...

Leftovers - well not quite!  I have leftover filling though, so I'm going to make some more this weekend!  I have potatoes and cheese ones to make still....cicero you are welcome to drop by and sample them!

MrsPink - yes, I have had the problem of the pierogi opening up while they're being boiled as well.  I read that the main reason for that is that the dough tends to get dry when you're filling them and sealing them...so the best thing to do is try to do that part ASAP after the dough is rolled out.  Also make sure to fold over the openings and even pinch them shut, maybe with a fork, to close the seal even more.

And yes, getting the dough quite thin helps too - mine was almost too thick last night, but only 1 or 2 opened.  I was worried though!

Find them??!!  I MADE them Aimiloo - no finding needed!  Got my mom's recipe and made the dough and filling!

Stacey I will try to post the recipe in that UKY cookbook part?

Thank you!  I love them!  Used to eat the potato and cheese ones with mustard, yum!  (Of course they were store bought and frozen, but hey)

I miss staying over at my best friend's house where her Polish mom would make pierogi for us...potato & cheese friend in butter & onions.  Drool!!!
