Ok...I have to truly apologize but I wasn't able to do the cookies yesterday. I am sorry. There may still be a chance that I will do them tomorrow but I can't guarantee it. I'm so sorry Stacey! I really wanted to help a preggers girl in need...

My sister says she will bring them this summer, is she kidding, I need them now!  Might ask my parents next, they always have some too!

Wow Stacey you are too generous - I think if we had a 'nicest person on the forum' you would likely win on that comment alone.  :)  I think I will try that recipe too - pkessler and I can compare notes!

I too love thin mint cookies, not enough to make them though!  However, while wandering through the biscuit isle at Sainbury's the other day I found something called Polar mint chocolate biscuits and gave them a try.  They aren't round, so they don't evoke childhood memories of GS cookies, but they sure would good,,,,,in fact (please don't stone me  :)) they were even better than thin mints!  They were a Sainbury's brand so they are probably available at most stores.

Hopefully those will take care of your Thin Mint craving but if they don't then have whoever comes to visit you bring you some Keebler Grasshopper cookies. They taste (to me) exactly like the Thin Mints and you can get them the rest of the year when they're not selling GS cookies.

OMG!  So good.  I just wish there were more in the package.  I banned Rich from eating them, he would eat them all at once (no kidding) I have one a day and it will last the week.

Stacey,,,,You've got me on a quest now to locate thin mint cookie replacements!  Besides the Polars, I've found one called Viscount, these are round white cookie with layer of mint frosting and covered in chocolate, not too bad (got these at Somerfields but they also had them at the weigh & save shop). Also found McVities Mint Chocolate digestives, didn't get them, but they looked interesting.
