peeling hard boiled eggs

Hope someone can give me a tip or two - I cannot do it properly for the life of me!  I always end with a million little pieces of shell all over the egg which then take forever to get off.  Then I end up peeling away parts of the white as well, which is bad because DH hates the yolk.  Any suggestions?  Maybe I'm boiling them too long???

One thing that is helpful is to peel them under running water. It helps to cleanly get the shell off and seems to make it a bit easier (so it doesn't stick to itself).

I have the same problem, my mom has been trying to tell me for years how to do it, but i still have trouble.

This is from the food network, so who knows, maybe it would work:

"The best way to make easy-to-peel hard-boiled eggs with pure yellow centers is to place the eggs in a pot of cold water and add a teaspoon of salt. Place the pot on the stove and bring to a boil. Cover the pot and remove from heat and let sit for 13 minutes. Drain the eggs and immediately place in an ice bath until completely cooled. Drain and enjoy your perfectly cooked hard-boiled eggs."

Yeah alchemista I just tried that with the last egg - DH was walking in the door so I thought I better get moving on dinner!  It seemed to help a bit...the annoying part is all those little pieces prick my fingers....dumb egg shells.

Thanks tristessa - I will try that next time!  The silly thing is I don't make them too often but then when I do, I forget how to properly do it.  I will remember next time though.

I use the food network method.. have ever since Sara Moulton talked about it.  Almost always works perfectly..


the age to the eggs will play a factor.... older eggs are better than the freshest of the fresh.

Some books also suggest putting a pin hole in the top of the egg... but I have never tried that one.

I was just gonna mention using older eggs.  Fresh eggs are a nightmare to peel because the shell breaks into a million little pieces.  Use eggs that are at least a week old.  ;)

What I do is run them under cold water as I peel them. I hit the top part of the egg on the counter and peel. It helps because on one side of the egg there's an air bubble. Then make sure you get that thin peice of skin(?..)that's under the shell because if you don't get that then it's harder to peel and it comes off in peices.

That's how I do it too.  Except I peel it off under running water, and start at the air sack.

I typically roll mine (get it partially cracked) and then break the top...it seems to work more often than not.
