We used to have to eat welfare cheese too!  Only we weren't on welfare, my parent's owned property and their tenants were on welfare.  But they wouldn't eat the cheese.  So we had to...hmmmm...funny that.

Ugh, my grandmother qualified for that crap cheese for awhile (although, as I think about it, I'm not sure why).  Let's just say that lunch at Nana's was never looked forward to when grilled cheese was on the menu. :-X

When my  mum used to buy cheese from our local South London grocer's in the 50s, the choice was Edam or a cheddar known as 'mousetrap' :-\\\\

Ya know, trying to remember back to the US government cheese -- well it was hard to say what it was...it was a little American-y, a little very mild cheddar-y...the mystery cheese!  I don't remember it tasting poorly -- it was ok, just not much of a distinctive taste one way or the other.  It was certainly no worse than plain old Kraft American cheese (singles) which tastes like no natural substance known to humanity, IMO.

Raw red peppers....used to hate them, LOVE them now.  (Still don't like them cooked, though....)
When I am grown-up I will understand how BEAUTIFUL it feels to administrate my life effectively.

Until then I will continue to TORCH all correspondence that bores me and to dance NAKED over the remnants of its still glowing embers.

Yes, kind of like that though I don't think it was quite as soft as Velveeta.

That's exactly what it was like. But there was no "cheese" taste to it. It more like a manufactured non-dairy cheese-like food product (er - yeah! Velveeta! ;) ). I wonder what the nutritional value of that stuff was? It wasn't the most horrible tasting stuff in the world but far from champagne and caviar.
