I do but are you ready to do some sort of time consuming cooking?  All mine seem to take a while to make so I rarely make them!

Are talking like the better part of a day?  Or more than one day?  'Cause I sometimes do the all-day cooking thing, or make part of something ahead of time.

More like an hour/two?  It's like roasting the peppers and all that....just takes a bit of time.

Oh yeah...no problem.  I'm used to doing more time consuming cooking.  And hubby sometimes make homemade curry blend -- where he roasts the whole spices & things like that.  I suppose we could use these in Indian as well as Tex-Mex too.  These are dry peppers so I think I have to reconstitute them first?  An old (very long ago) boyfriend of mine went to chef school so I always watched him make stuff with peppers like this -- but want to try & learn for myself now!  DH recently got some sweet Spanish red peppers dried as well...so we're up to our ears now in dried red peppers.

Got it - here it is!  I found it online.  I have made this before and it is really good...it does have dried ancho chilies!  I couldn't remember for sure but it does hooray.  You probably could do a meat version but as you probably know already, I'm a veg.   ;D

WILD MUSHROOM ENCHILADAS WITH ANCHO CHILI-CREAM SAUCE

2 cups water
2 dried ancho chilies
4 large garlic cloves, peeled
2 cups whipping cream
4 teaspoons fresh lime juice

3 tablespoons butter
3/4 cup chopped onion
12 ounces fresh wild mushrooms (such as oyster and/or stemmed and
 sliced shiitake and portobello)
5 ounces feta cheese, crumbled
6 tablespoons chopped fresh cilantro
2 medium tomatoes, seeded, chopped
1 small avocado, pitted, peeled, cut into 1/2-inch pieces

8 6-inch-diameter corn tortillas
 
Bring 2 cups water to boil in small saucepan. Remove saucepan from heat, add chilies and soak 30 minutes. Drain chilies, reserving 6 tablespoons soaking liquid. Cut stems off chilies. Cut chilies open. Scrape out seeds and discard. Combine chilies, 6 tablespoons reserved soaking liquid and garlic in blender and puree until smooth.
Preheat oven to 350°F. Combine cream and chili puree in heavy large skillet. Bring to boil. Reduce heat; simmer 3 minutes. Whisk in lime juice. Season with salt. Strain sauce; return to skillet. (Sauce can be made 1 day ahead. Cover and chill.)

Melt butter in another heavy large skillet over medium heat. Add onion and mushrooms and sauté until onion is translucent and mushrooms are tender, about 5 minutes. Add cheese, cilantro, tomatoes and 3 tablespoons cream sauce. Simmer until just heated through, about 4 minutes. Stir in avocado. Season filling with salt and pepper. Remove from heat.

Bring remaining cream sauce to simmer over low heat. Cook 1 tortilla in cream mixture until softened, turning to coat, about 15 seconds. Carefully transfer tortilla to baking sheet. Repeat with remaining tortillas. Cover remaining sauce and keep warm. Spoon generous 1/3 cup filling down center of each tortilla. Roll up tortillas, enclosing filling completely. Arrange seam side down on same baking sheet. Cover enchiladas with foil.

Bake enchiladas until heated through, about 10 minutes. Transfer to plates. Spoon some sauce atop each. Serve, passing any remaining sauce separately.

Makes 8 First-Course of 4 Main-Course Servings.

Thanks geeta!  Yes, I think you could make any sort of enchilada filling with that -- though the veggie version sounds really yummy.  The enchilada sauce (with the peppers) is the thing! ;) :)

It is verrrrry good if you have the time to make it all and get all the right ingredients the first time....wow now I want it too!  May have to do some shopping for the weekend.  I don't think I've ever made it for DH before!

I kept $8 in my wallet.  Right when I get back I'm head straight to Taco Bell and spending it all - large Mountain Dew included.  Also I'm looking forward to going to Outback Steakhouse and getting a Bloomin' Onion and a juicy medium red steak!!!

OOh...it's a toss-up between Chicago deep-dish pizza and side salad with RED french dressing or a REAL submarine sandwich on hard french bread with oil and vinegar..mmmmmmmmmm  **drool**

a real ALL BEEF hot dog with chilli and cole slaw (or maybe a trip to the hot dog shoppe)
Root beer
S'mores
jello
kool aid
peanut butter pie or peanut butter sheetcake (I've found Jif over here, but it costs too much to use nearly a whole jar for one pie/cake...)
a real thanksgiving dinner the way mom makes it with all the trimmings (ok, maybe that wont be the FIRST thing...but I'll look forward to it!!)
corn on the cob: a dozen for a dollar at walmart instead of 4 small ears for 2 pound 58
Real sausage (particularly Bob Evans spicy sausage) on a Lenders bagel with pepperjack cheese and an over-hard fried egg
mom's meatballs
italian sausage sandwich with mozzerella
a huge salad with REAL DRESSING, particularly french...oooh, yum!
lasagna hamburger helper
a whole jar of baby pickles!!!
a rueben sandwich, loaded up!!
actually, any sandwich would be good...can't stand the lunch meats over here...yuck!
mmm maple turkey, with maple ham and baby swiss with MIRACLE WHIP, not mayo, and bread and butter pickle slices on wonder bread.....

lord, I'd better stop...I'm making my tummy rumble like crazy!! :o ;D
