Red Leicester or Double Gloucester are both nice & get you kind of a yellowy cheesy sauce similar (but oh so much better than!) what people would be used to with Kraft and/or Velveeta.

Last time i made mac&cheese, i used Cathedral City mature cheddar, and Gouda.   Mmmmm... now im thinking of making it with that Gouda you get in Amsterdam that's got the cumin seeds in!   :D

It's also delicious to add together different types of cheeses. DB doesn't like mac and cheese, so if I make it it's just for me.  ;D

That site is my new best friend! I've found that I'm using my real cookbooks for weekend dinners, or if I'm home during the day and I'm using this site for quicker recipes and more variety.

you dont really need a recipe!

Just cook your pasta... any shape you like.

Then, in a saucepan, dump a couple of handfuls of grated cheese... any kind you like.  Mix in a little bit of milk and keep stirring it while it melts.   If you need more milk, add it.  If you need more cheese, add it.   I sometimes put a bit of butter in as well.   When it's all melted and looks like a cheese sauce, mix it into the cooked & drained pasta, then sprinkle more grated cheese over the top and bake for 15-20 mins or till it looks the colour you like it to be.

Really?  Does that work.  Because I make a white sauce and then add the cheese.  Your way seems so much faster.  Hmmm.

naw, i dont make a white sauce.   i just throw cheese and milk and sometimes butter into the pan and melt it all down!

I have been making mine too by making a white sauce first & then adding the cheese -- cos I was afraid the cheese might be a bit stringy otherwise.  Q-G, so doing it the easy-peasey way, does the cheese get nice & smooth & melty?

I suppose it depends what sort of cheese you use, whether it goes stringy or not, but mine never has done.   Perhaps the adding of the milk helps with that?

i just remember when we would melt like colby cheese or whatever it would go oily and horrible. Does gloscester? cheese do this too?
how can I prevent it turning into a sauce and instead more creamy?
Im afraid im a bit of a novice guys!  ;D

My answer to that, littleladylovelylox would be to make a white sauce first & then put the grated cheese into it to melt.

But Q-G has got it to work without the white sauce...so I wonder?

I like to do it Q-G's way, then lightly cover it in breadcrumbs and pop it in the oven for a couple minutes.  Bubbly, melty and a teeny bit crunchy.  Mmm.
