Nope!  It's all a question of balance - heat, mixing, cheese & milk.  Too much or not enough of one throws it all off.

Here's a really good mac & cheese recipe that uses a white sauce.

Basically, a white sauce means you melt some butter, then add flour. Then very slowly, add your milk. The key is to add the milk really gradually, whisking well all the time - or else you'll get big yucky lumps.

Melt 2 tbsp. butter and add 2 tbsp. flour. Cook that for a little bit until it's nice and bubbly,then whisk in 1 c. warm milk. Cook over medium heat until it bubbles and thickens, stirring frequently. Take it off the heat and add grated cheese, probably a cup or two, and stir until it melts. Don't overheat the cheese or it will separate and get grainy. Add seasonings to taste--I usually use salt and white pepper, plus some mustard powder and maybe a bit of nutmeg. The mustard enhances the cheesy flavor.

Now add your cooked pasta, stir it around, and either eat it right away if you're impatient, or pour it into a dish and pop it in the oven at 350F or so for about 15-20 minutes.

When I'm making it, I usually top it with some breadcrumbs that have been sauteed in a bit of butter before I bake it. The crispy breadcrumbs are the best part, in my opinion!

If the sauce is too thick or thin for your taste, you can adjust the quantities. Just stick with equal parts of butter and flour.

(Edited because I looked at my recipe and discovered it should have been 2 tbsp. butter and flour, not 1 1/2)

This is a really easy recipe for Mac & Cheese that doesn't require cooking the macaroni before hand. It is surprisingly good and creamy!

well it was edible, but i know where i went wrong.
next time more cheese, less flour, bit more milk.
kinda turned a bit thick and not cheesy enough.
thats what i get for trying to only make enough for me.
 ;)

I just made a batch... just to prove it works!  ;)
I used a 250g block of Monterey Jack,  around 2 tsps butter, and around half a cup of milk.   I didnt measure... just guessing.

It came out perfect...no flour needed.  But i suppose if i had used flour i could maybe have got away with using a bit less cheese.

Yay! And now you have an excuse to make it again... ;) I find that I need some fairly sharp cheddar to get it cheesy enough.

But I'm going to have to try this flourless cheese-melting method. Sounds interesting. More cheese is always good. ;D
