Made a super cold salad of petit pois, cooked them lightly then plunged them into ice water, drained and dded lemon juice, tiny drizzle of olive oil, fresh mint leaves (torn) and some black pepper and small cubes of feta cheese.
Grilled some chicken to have on top, was delish! It was my own invention and Im quite chuffed for a 10 minute cold salad from just random ingredients
