A lamb dinner was also an Easter tradition when I was growing up. It had all the symbolism: renewal, rebirth, etc.

*LOL*... how can a roasted dead baby lamb carved on a plate be a symbol of renewal and rebirth?!  ;)   ;)

How cool, Helen! For the Brits on here unfamiliar with what we're talking about, the grocery stores used to start selling what were called Paz kits at Easter time. They consisted of different-colored tablets that you dropped in cups with vinegar, and then you had a dye in which you soaked white eggs using these awkward wire egg holders. They also included stickers you could put on the eggs, suggestions for multicolored eggs, and the boxes had holes in them in which you put your dyed eggs to soak. It may sound lame, but it's a part of just about every American kid's childhood. Those same eggs would be hidden the next day for an Easter egg hunt, and then it was up to your mom what the hell to do with them. :)

I found an easter egg colouring kit in a stationery shop...might have been Clinton's.. in their Easter section.. And i'm lucky enough to know someone who found some white eggs for me through their chicken loving mates.  My boys are excited and I find it very sweet and yes, the kit has that weird wire thing for lifting out the eggs :P

It was always ham and scalloped potatoes for our family... but my kids don't like either so we're going for huge midday brunch and skipping the afternoon meal...

that sounds like a complicated way of dying eggs. My mother used to wrap onion skins or cabbage leaves around them and tie them up in a small square of cotton fabric then boil them, they came out lovely marbled colours.

Also lamb eaters growing up..

then there would be this sweet bread  with colored easter eggs trapped in under bread type pretzel fingers.   usually the bread was in the shape of a cross..

I did Paz this year with my three year-old. Now I'm left with the job of eating all those hard boiled eggs. No one else in the house wants them. Here's how I eat them: I mix a little soy sauce with a bit of Vietnamese chili sauce in a small bowl, then I dip!
