I am not a big couscous eater or maybe it is because I never found a recipe I truly like before now but I had to share this with you all..

It is GORGEOUS!!!! I could eat this all the time.......

Apricot Couscous:
1 cup couscous
11/2 cups warm water
10 dried apricots
1/4 cup whole almonds, toasted
2 green onions, green parts only
2 handfuls fresh mint leaves
2 handfuls fresh cilantro leaves (coriander)
1/2 lemon, juiced
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper


I should say you put the couscous in a bowl and add the warm water and let stand covered for about 10 mins and then fluff with a fork and then add the ingrediants and put in a serving dish and put in the fridge covered.

Again I don't add as much mint or cilantro as the recipe calls for I only use 2 mint leaves but alot more cilanto.

Oh I only use 2 mint leaves cause I don't like a big mint taste.....

I have been slow baking a briscuit in the oven I did want to do it in my smoker but it was to cold outside and would have taken forever...

making potato salad and baked beans..and this couscous!

We eat it every friday as tradition and it is great dish.  I even used to have couscous party at USC .

couscous is one of my favorite new dishes... but I always seem to make it the same flavor! i like it with red onions and zuchini. a tip I learned was use stock in place of plain water. I have different flavored stock cubes for variety... but mysteriously it tastes the same.  ;)

I have a lovely couscous recipe with chickpeas, shredded chicken, kalamata olives, red peppers, currants, and some other things I can't think of at the moment. Basically, I just toss in whatever's in the fridge that sounds as though it will taste nice together! But the key to my recipe is the DELISH dressing -- fresh squeezed orange juice, grated orange rind, red wine vinegar, olive oil and cumin.

(jklm, I use chicken stock with my couscous, too.)

I am drooling at that one!! Well, that's probably why my couscous always tastes the same because I do like you and throw what's in the fridge! I usually have spinach and brocoli in the fridge too, but that just doesn't scream couscous like zuchini!  ;)

I do need to experiment more with dressings though!

wow, i feel boring, we always seem to do couscous the same way.  Saute zuchini and mushrooms, serve over couscous with a little spaghetti sauce, is very yummy, but all of the ones here sound so good i'm gonna have to branch out ;D

DH did something the other day with couscous, harissa paste and lemon juice and it was unbelievable. I'll have to ask him exactly what it was.
