What you need:
2 (10 ounce) packages frozen corn kernels, thawed
1 cup heavy cream
1 teaspoon salt
2 tablespoons granulated sugar
1/4 teaspoon freshly ground black pepper
2 tablespoons butter
1 cup whole milk
2 tablespoons all-purpose flour
1/4 cup freshly grated Parmesan cheese
What you do:
In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat, and stir in the Parmesan cheese until melted. Serve hot.

I got a corn spoonbread recipe from one of our MIA expats that has sour cream in it.  It takes creamed corn - but also Jiffy Corn Muffin mix!  Which I happen to have a stash of...and it was really good - the boys all loved it and are demanding it again!
I have a recipe for corn bread, and it reminds me exactly of Jiffy! When you run out of your stash, holler and I'll post the recipe.

Oh sorry! I'm answering!!

Corn Bread (or muffins)

1/2 cup butter
1/4 cup sugar
2 eggs
1 cup milk
1 cup flour
1 cup cornmeal
1 TBSP. baking powder
1/2 tsp. salt

Preheat oven to 375 F. Combine butter with sugar and eggs, blend in rest of ingredients, mix until just blended, few lumps are ok. Bake in loaf pan, or muffin tins for 25 minutes.

When you are blending it, taste it then, it tastes and looks just like Jiffy!! At least I think so!! Lemme know it you try it.

oooh, I'm glad I resurected this thread - Pam you rock, thanks for that. If I can't get to Sainsburys (must get a car I can drive!!!) then I'm going to try making my own. But to get a bonus recipe for jiffy-like corn bread is fab!  :D

Thanks Ca_Girl!  I think I will try it tonight... I have only one bag of Betty Crocker left and it would save me bringing it over from the USA.

she always made it for us for Thanksgiving, Xmas, and Easter dinners.

It's a creamed corn casserole, and its one of my favourite holiday dishes... its also nice for large gatherings of people for dinner parties or pot luck dinners.

I've been thinking I'd like to make a one-quart corn casserole now that I could freeze and then just re-heat on Thanksgiving. Something with lots of sauteed onions. Do you think this could be frozen?

I'm not an expert, but I don't think things with dairy in them freeze well? Or am I just making that up? I mean afterall, there are frozen pizzas, right?

Don't mind me.  :P

As for canned cream corn, I don't mind it so much. And it's certainly fine for my mom's corn pudding recipe....

Canned cream corn is yummy!! Only thing is, they add sugar to it, I never realised that, until I read the ingredients.....of course, add sugar, anything is yummy!!!! I'm glad you all liked my cornbread/jiffy recipe, please let me know if it turned out well! I've never been disappointed with it, it always turns out totally yummy for me. Now, I just wish I had the can of mexican spicy corn that I could get back home to mix with it, to make spicy mexican cornbread!!

you guys are making me HONGRY! i love creamed corn. but i love corn anyway but its my fave. I havent seen any around either. We shop at Sainsburys, but i belive this tescos place must be better.. Hmm i may have to go in there tomorrow to lookie around.
  I LOVE Corn Cassarole/pudding. OH its soooo good. My mom makes it for thanksgiving.

 Awe no thanksgiving up in here. I shall survive.

So... i'm making up my thanksgiving menu for this year (sunday lunch style)... is the taste really worth making creamed corn from scratch?  not sure if brits will like so not sure i want to go through the effort if they're not going to eat.... is it worth it to make creamed corn?

It's so funny this topic should come up!!   Guess what I found today at Sainsbury's?  I found Green Giant Creamed Corn!
