Cooking with Whiskey

I've got a recipe for a BBQ glaze for chicken and salmon and it says to use bourbon whiskey. I accidentally bought scotch whiskey. What's the difference and will it change the taste dramatically?

The difference is in the ingredients and the brewing/aging process, and yes, it will change the flavor pretty dramatically.  Sorry hon. Can you exchange it?

There's a huge difference in flavour (and a difference in spelling, too... Scotch whisky doesnt have the 'e'!  ;) )...
Im not really sure how it will affect your sauce, but i would definitely be able to tell if someone gave me a Jack Daniels & coke instead of a Scotch & coke, or vice versa.

Jack is smoother and sweeter (unless it is a seriously good malt you have there, in which case it is too good to put on a chicken!).  I can see how a JD glaze would work, but I can't imagine a scotch glaze being anything other than pretty grim.  It wouldn't work with the other spices and it would overpower the flavour of the salmon.

My local shop hasn't got any bourbon but it does have JD. Do you think that can substitute it?

According to their website, it isn't. It's a Tennessee Whiskey.  ::)

JD may not technically be a bourbon, but it's what most people think of when they think of bourbon-it's a sour mash and that's essentially the same thing. It will work perfectly well.

It did. I used it on salmon and it was lovely. Definately going to make it again.
