I don't usually boast about any meals I cook but last night I made something that was soooo good I feel I need to share. Others may have tried this but this was a first for me. We eat lots and lots of chicken so I'm always on the lookout for new recipes!!
Take some chicken breast and pound it flat, season the chicken w/ salt and pepper, set aside.
Chop some sundried tomatoes, rehydrate them w/ hot water. Once they are soft drain the water and add some chopped garlic, salt, pepper and a dash of olive oil. Mix together (make enough to roll into the flattened chicken).
Take the chicken fill it w/ the sundried tomato mixture and roll it. Take the prosciutto and cover the chicken w/ it. I covered it the long way, used less that way. Take some aluminum foil and tightly wrap the chicken (kinda looks like a Christmas cracker) put it in the oven for 20 minutes at 220. You can either cut the roll into 3 and serve or serve it whole. Whole it kinda looks like a sausage. I like the way it looked when cut better. Oh and I also browned the roll after I cooked it just because I liked the look of it better. I served it w/ roasted new potatoes and a salad, it was YUMMY!!!!
