I did a tabbouleh while the in-laws were here, and put fried sliced halloumi on top.  MIL is a pescetarian.

Carolyn, Your post really has me laughing.  I don't have a clue what those words even mean   ??? - the ones with more than one syllable, I mean!

like cait i've been living on salads.  the roast chicken and apple one was a healthy take on a waldorf salad and AMAZING.

Last night i made this and it was great as well.  i made it with mango.  it was SO good and light!

melon and prawn salad

1 medium Galia Melon, 1 small, de-seeded and quartered, or honeydew
200 g peeled tiger prawns, (7oz) shelled, thawed if frozen
2 medium onion(s), sliced thinly
1 portion fresh green or red chilli(s), fresh, red, deseeded and sliced thinly
2 tablespoon Thai fish sauce, or light soy sauce
1/2 teaspoon caster sugar
1 juice from 1/2 lime(s)
1/4 teaspoon pepper, freshly ground, black
4 small leaf lettuce, dark green, to serve
1 teaspoon fresh coriander, a few sprigs, chopped roughly


Instructions


Slice the skin off the melon and cut the flesh into half moon slices.


Pat the prawns dry with kitchen paper and season with pepper.


Mix the onions, chilli, fish sauce or soy sauce, sugar and lime juice together by shaking them in a jar. Pour over the prawns and mix well. Leave to marinate in the fridge for about half an hour or so.


When ready to serve, toss in the melon slices and serve on small plates on which you have laid some dark green salad leaves. Scatter over the herb sprigs and eat quickly!

Tabbouleh is a sort of Middle Eastern salad (I guess?) with bulgar wheat, olive oil. lemon & I put tomatoes & cucumbers in it, seasoning, I forget what else.  I was following a magazine recipe but it was dead easy.

Halloumi is what my DH calls 'squeaky cheese' (though I've heard the good stuff isn't supposed to squeak when you eat it) -- it's a kind of cheese from Cyprus or the Middle East.

Pescetarian - sort of like a vegetarian, although she (MIL) will eat fish & seafood (pesce).

We have tabbouleh quite frequently, especially on hot days.  Having some tonight with cooled baked chicken.

I love to do a cold pasta salad.  Pre-cook your favorite pasta (rotini, fusilli, even spaghetti does in a pinch) and chill.  Toss with olive oil or your fav vinegrette dressing and your choice of fresh raw ingredients...I personally like diced onion, fresh tomatoes, olives...you can add in some cold chicken or canned tuna if you want to add protein.  Add more veg if you're so inclined (ideas like raw carrots, broccoli, celery, cucumber).  Top with some parmasean if so desired...it also makes a good picnic meal that you can prepare ahead of time!

Tesco is doing a 500g package of frozen pineapple.  Blended that up tonight with some coconut milk and OJ for a nice cold smoothie.
