Ok, what happens if we apply for my Brit husband's green card through DCF (we've been married 8 years in March) & we get it (or rather the stamp-thingie) but don't move to the US? Does it stay "open" for an indefinite period so we can move at some point over the next few years? Or is it open for, say, just 12 months?

You have six months in which to activate the visa by entering the US and having it stamped.

If you do not do that within the timeframe then you have wasted your money on the process.

After the US Consulate in London issues the visa for a Permanent Resident, he or she will have ONLY 6 months period, counting from the date of issuance of the visa, to enter the USA.

 If the 6 month period elapses, and the Permanent Resident does not not enter in US, the Visa will become invalid.

Would it make the IO question us on our final move (past the 6 month mark) as to why we didn't complete the process which would, it turn, make things difficult for us? BTW, we have no plans to do this yet, just thinking in advance, perhaps years down the road - but wondered how logistically people do it!?

There is absolutely no problem with doing this - many people do when they still have things to wrap up in their home country prior to moving over to the US for good.
