« on: July 25, 2006, 07:41:30 AM »
HI! Does anyone have one?  I tried  doing a search mode on the site but nothing came up.. literally. Does the search feature  still work?  What about the spell check?   Anyway.. if you have an easy recipe for frosting  I'd be so grateful.  Thanks!!

I use one block of UK butter and 1 box of icing sugar (I think it's the 1kg one but will double check for your and post back here).

Allow butter to come to room temp and mix icing sugar into it in small batches (careful, it will release a cloud of sugar dust if you do this too aggressively at first!). I use a hand mixer to do this.

To this base, you can add lemon, vanilla, cocoa, cream cheese or any other flavor you like.

I use the one in the Be-Ro book (skinny pamphlet-style book sold in supermarkets, usually near the flour)

Adding to Balmerhon's recipe....you can add a little milk slowly (about a qtr cup) to make the frosting a little creamier.

One trick I have for frosting is to beat the butter on it's own for about 3 minutes before adding the sugar.  It just makes it nice and fluffy.

Melt 1/2 block unsalted butter and 60g dark chocolate in the microwave.  Whisk in 1 cup of powdered sugar and 1/3 cup of cocoa powder.  Then whisk in about 1/2 cup sour cream.  Add more powdered sugar and sour cream until its the desired consistency.  (I usually add about another cup of sugar and maybe 1/4 cup sour cream.)

I've also substituted plain yogurt for the sour cream and that worked well.

those recipes look good and easy.
I may have to start using them, as i'm noticing it's becoming increasingly difficult to find the Betty Crocker ready to spread icing in a tub.   I used to see it everywhere, but all 3 of my usual supermarkets have stopped selling it.   :(
