Advice on quick and easy US marriage

I am planning on marrying in NY sometime next month.  It is low-key as we would like to plan a larger ceremony when the time is right.  This is mostly for issues of being able to stay together.

I currently live in the UK, fiancee is EU joining me in London just before wedding, then off to NY for a quick civil ceremony. 

Does anyone have any advice on the easiest route to accomplish this?  My thought process was go to NY, apply for wedding license and get married the next day, then asap go to consulate for EU family visa to get myself back to UK.  I just am not certain if it will be as easy as this though.  Will I and my intended need blood test or special documents.  Do I need to claim a perm. residency in US? ETC...

I want this to be quick and easy, mainly cause I don't want to make it a big deal since we are planning a big deal wedding for later, but want to assure that I will be able to easily get hitched and back to the UK with new husband.

Any insight would be helpful.

ok, like i said on your other thread you'll need an address for your visa application since your current UK visa/permit is  about to run out. If your family's in Minnesota and you can use their address, then just fly to Chicago, have a quick wedding there, and apply for your EU family permit at the consulate (although...I'm not sure it's same day service like a spouse visa would be.)  Keep in mind you'll need to allow some time to get your marriage certificate....check with the county you're planning on marrying in to see how long it'll take.
