I use 1 and  a half water to one of rice. Bring to the boil, simmer on very low gas with tight fitting lid for 10 minutes, then turn off and leave for at least 10 minutes then fluff up with a fork. Works every time and will keep hot for ages if you leave the lid on.

I've never measured, just use my hands.

Rice in, water until it almost covers your hand.  Or, one knuckle of rice, one knuckle of water.  Bring to a boil with the lid off, then cover and let sit.

The thing I've found is that every type of rice and each batch is a bit different.  Some need less/more water than others...

Oh!  The rice I bought last month had odd instructions.  Boil a large quantity of water, then add the rice.  Cook for (10?) minutes, then drain.  Anyone tried that?  Seems like you'd be making soup...

ETA:  That seems like Britwife's recipe, too.  I'll try it some time!

I do mine the same way as HME, but I put the rice in first, pour on kettle boiled water, don't measure the water, just have it about half an inch above the top of the rice, and I don't let it stand.

i used to use my hands as well to measure, just how we used to do it in the Philippines.  but i use the lines on my fingers, usually the middle one.  It is true that the amount of water depends on the rice.  white rice is usually 1 for 1, and brown rice is double the water.  when i'm making rice for sushi and i only have long-grain and not sticky rice, it's triple the water.  but when i went back to florida for christmas, i brought back a small rice cooker from walgreens for $10.  it's been great!
