You need matzo meal to make the matzo balls and there is usually a recipe on the side of the box. I think it is something like a cup of matzo meal to a stick of butter and some of the fat skimmed off the soup...something nice and healthy like that!

I make a really simple chicken soup using just a whole chicken cut in eighth's, stock, bay leaf, onion, celery, carrots and parsnip, water and salt and pepper all set to simmer for about an hour. I pull out the chicken and remove it from the bone and pop it back in the soup.
I make my matzo balls in a separate pot because they need to boil and I don't like to boil my soup.
Mmmm...I think I will make some this week too!
