Perhaps I am late to this thread.  Did you already purchase a car?
I used to work at a car dealership in the US and the Demo car is what the sales people used to drive.  It was his/her car to drive to and from work and whereever else.  It let the sales people truly learn what the car was like so that they could promote the car to prospective buyers.
Buyers actually sought out a Demo car for purchase under the belief that it was well cared for.

I did buy a car this week (YAY!!) but not the yellow demo one. Which is sort of a bummer cause I think it would have been a fun color.  ;D

Mine is blue and I bought it on Ebay.  :o

I tend to research things to death, and knew how much I was willing to pay for which specific year/model. I went and test drove it this past Sunday, ran an HPI check on it, etc. I have never bought anything this pricey on Ebay before, and I must admit I was a little shocked on Tuesday when I won. I am going to the bank to have the check made up today and I am going to pick it up tonight or tomorrow.

Thanks for all the helpful advice/info. I am still not sure I would have bought the demo at the price the dealership was asking. Based on the multiple valuations I ran online, it was overpriced by about £1000, and when I visited the dealership, the sales guys were just as pushy/smarmy as they can be at home. I am also not convinced that demo cars are treated well, but I guess that is a risk you take with any used car. At least I have a used Honda and not a used Yugo.  ;D

You might want to check the warrenty. When I went to buy a digital camera, the salesman said he would sell me the demo camera used at conventions, but instead of a 12 month warrenty there would be a 6 month warrenty. So, I'm guessing demo items have a shorter warrenty then normal

I think that depends on the company. Where I work, they sell demo stuff on eBay and with that the person gets the 14 day return policy and the standard 1 year warranty.
