Fresh basil
« on: August 28, 2006, 07:19:24 PM »
I grew some basil from seeds just for the sake of watching it grow in my kitchen window. Despite nearly killing it off when I was on holiday last month, it is thriving even better than before.  ;D

...but what do I do with it? All I can think of is take a few leaves and chop it up and add it to a tomato sauce. There must be other ideas??  ??? Suggestions please?

Home made pesto or a nice tomato salad: slices of nice ripe tomatoes, topped with mozzarella and basil leaves.  A drizzle of olive oil and a sprinkling of sea salt.  Yum!

Fresh basil is fabulous on pizza!  You can even throw some onto a frozen pizza before you toss it in the oven.

Bruschetta!
*chop up roma tomatoes and basil, a little bit of garlic, and soak it in 1 part balsamic vinegar, one part olive oil- in the fridge for a couple hours or overnight. slice a baguette in small rounds and toast them. put it on top. mmm.
