Apple pie

I want to make an apple pie but I don't want to use cooking apples because I don't want to have to use loads of sugar.  What kind of apples do you think would be sweet enough? Gala?

funny you posted this!  Just read in Good Food mag to use Bramley apples!  We book marked the page so we could make this pie!!!  ;D

The best apples for pies are transparents but I don't know if you can get them here and they are very fragile.  But.. I went to the farmer's market and asked "my apple guy" for pie apples.  He went to another stall and came back with a bag full of the biggest apples I've ever seen.  I don't know what kind they were, but they made the most fabulous pie!  He said that they have a secret stash and you need to ask for them.

If they were really big they sound like cooking apples.  Were they quite tart?

Bramley are cooking apples and can be quite tart. Liz, the problem with using the sweeter apples is that they tend to cook down a lot mushier. If that doesn't bother you, then go for Gala or some of the sweeter apples that might be making their appearance now (I love apple season!). However, I'd personally recommend that you use a combination of apples. My mom is famous for her apple pie and she swears this is the best way to go. She uses a couple Granny Smiths and then whatever sweeter apples happen to be around. This will help cut down on sugar, too.

no, they were lovely and sweet.  I didn't have to add much sugar - but then again I can't tolerate sweet so I always cut sugar in half anyway.  They weren't tart at all.

Just a little vent... I've bought some apple pies at different grocery stores since I've been here and I just HATE the crust here!!  It's too spongy!! OK, I'm done. :D

Try Desertdreamer's pastry recipe (it's in the frozen pastry thread) - really easy to make and delicious!

Fuji apples are very good, but I don't know how they would do with baking.

Last time I cooked apples, for turnovers using the pastry Britwife mentioned, I didn't even look at the brand!! Just bought regular plain red eating apples. (turnovers were delicious too.)
