Why do burgers generally taste so bad here?

I have to agree. I don't like burgers here.  I think its because they use a different style of grinding meat (or diff parts of the Cow?) They call it mince beef here. Full of grissle and tastes yuck.  I finally found a butcher who does Ground beef. I now make my burgers at home and they taste exactly like the ones in America.

Is that the difference??! I used to love burgers but can't stand them here, except for BK when I go into town now and then and need a fix.

I may be wrong but I was under the impression that they used the meat they wouldn't use for anything else.  Boiled and peeled off the bone and then put back together in the form of a patti which is why the burgers look like they have been made with ham or something.  Maybe I am not explaining myself properly but if you bite into a burger here you will see that the meat looks different than the US burgers.

I've nearly stopped eating meat, beef at least, in the years I've lived here, because it just tastes, well, off, wrong, bad. Is that why?? I have heard all about how wonderful the beef is here, but never tasted anything that warranted the hype. In fact, it made me think maybe cows pumped full of drugs are better (lol, kidding). So you mean to tell me, all I have to do is go to the butcher and ask for him to cut the meat differently and I will be able to eat it again without thinking it's not so good??

The butcher I go to is actually in kwick Save. Not sure if all stores have independent butchers, but if they don't have any on the shelf I just ask the butcher for GROUND beef and its all good.  ;D

If you want good burgers, get good quality meat and tell the butcher to grind it for you or grind it yourself at home.  I have done that when I want good burgers and they turn out really good.  There is not much to a burger so good meat is really essential.

Um.. you get what you pay for people.

ground beef or mince is all of the LEFTOVER parts of the cow (and sometimes other bits of animals) ground into one lovely mixture.  The beef can be collected over several days time.  Check out your local Kroger, Food Lion whatever.. they all do it the same.

You need a decent cut of beef and a decent butcher or grind it yourself.

If you buy pre-made crap patties with fillers I am not sure what you expect or if you buy a burger from your local take away or some van or crap pub.

The fat content also will impact the burger.

Sainsbury's Organic or Taste the Difference mince is good. Both them and Waitrose carry locally bred meats too which can make a difference.

USA Angus came from... um .. Scottish Angus...:-)
Welsh beef is also known for it's flavour and taste.

It's like comparing family pack Walmart grease pool ground beef to USDA registered Angus as far as I am concerned.

Shame on my wife for turning a good burger thread into a vegetarian crusade!  :o... we had burgers last night from our local takeaway ... mine a big greasy beef burger and she had a veggie burger pattie. Guess whose tasted like crap!

Seriously, though ... it is possible to find good burgers in this country and I've often thought it has to do with the difference between what we call "ground beef" in the US and what they call "minced beef" over here.

True, it's still hit and miss. I usually get a burger I really like about 3 times out of 10 in this country nowadays, which is a higher ratio now that I know what to look for. But my first year over here was dreadful -- the only even "decent" burger I got was at McDonalds!

Things are looking up --

Ground beef is a bit more coursely chopped, which makes it a bit juicier when turned into burger patties. What you get in the UK is usually a smoother texture and results in burgers that look and taste a bit funny to Americans.

Ask your butcher for ground beef -- if they know what it is. You can also ask them to grind the "mince" finer or courser depending on their settings and what the meat looks like at the counter. They can also "cross-grind" the mince after it's been through the machine a couple of times -- that can give more of the texture that we're familiar with in the States. Depending on your preference, remember the ground beef we get in the States often has added fat content. You want to try to find minced beef with a similar fat content to what you like.

You can get good ones at the supermarkets in the UK if you look carefully though. I always look for Angus Aberdeen beef or Welsh beef. Marks & Spencers sell packaged hamburger patties of Aberdeen Angus beef and they are fantastic for the bbq or even the indoor grill. I highly recommend them, they suit this American's palate!

The best option, though is to try to get minced beef from a local farmer. Some farms even deliver their beef to all parts of the UK, and if you can find one it's well worth the effort. Last year Liz and I went to a food fair here in Canterbury and one of the exhibitors was a company called Wild Beef Company from Devon -- I bought some minced beef there and made burgers from it and they were probably the best burgers I've ever had. Their phone number is 01647 433433, they sell beef by phone order.

As for restaurants, excellent burgers in London at Hamburger Union, Fine Burger Co., Gourmet Burger Kitchen, etc. as mentioned above. And a super burger at a pub called the Rose in Essex Road, Islington.
It sure ain't cricket!

Yep.. Wild Beef is good and so are Well Hung Meat www.wellhungmeat.com and they even do travelling burger vans.  Also, I can recommend http://www.mnsostriches.co.uk/ for a burger with a twist.
