Preparing Butternut Squash

Any suggestions?

I remember I used to buy this frozen butternut squash side dish in the US and it was so good.  But no idea how to prepare it.  I can't even remember who made it.  I do know it was like the consistency of mashed potatoes though

i roast it in olive oil in the oven with herbs

or i boil and mash like spuds

When you roast, do you put it in uncooked?  Cut in half?  Face down?  Up?  Sorry I am that hopeless!

I cut it in half, take out the pulp, put some butter, salt and pepper in the hole, wrap in tin foil and bake until soft.  If I'm feeling adventurous, I'll put in a bit of brown sugar as well.

What I do is peel it, gut it and cube it.  I grease a cookie sheet and place the squash on it.  Sprinkle it with a little bit of salt and allspice then roast it for about 40 minutes at 350F or  until soft.  It comes out creamy and delicious.

my gram taught me to halve it, scoop out the stringy bit, then fill the cavity with brown sugar, butter & cinnamon & bake it.

This is going to be no help to you at all because I can't find it, but in the last few days Flylady did a mailing about all types of squashes and things to do with them. I thought I had saved it but apparently not, and I can't find it online. Maybe another Flylady reader did and can post it here. Had a lot of good tips.

Sometimes I just peel and cube and steam with sliced leeks. They pair nicely.

I cut it in half, scoop out the seeds, and then pop it in the microwave until soft. A covered cooking dish will keep it moist. It's good plain, but even better mashed up with lots of butter.

Last week I cut one into pieces and then peeled (it was easier that way) then cooked it down in a bit of water and then pureed it. I added some seasonings and black beans and it turned out as a great creamy soup!  :D

What's the easiest way to peel them?  I find it difficult to peel them which is why I just end up baking in the oven and scooping out.

I quarter it first then peel it. It's still not easy but much easier than peeling it whole.
