Cut it in half, take out the pulp, put the halves skin side up in a pan.  Fill 1/4 with water and bake until soft in a 350 or so oven.

when it's done and cooled a bit, scoop out the flesh and puree with a hand blender or food processor.  Then, put in a sieve lined with cheese cloth or a tea towel and drain as much water as possible.  after you can freeze it if you want to.

Easy, easy!

Our Waitrose (across the way in Cornwall) carries Libby's canned pumpkin.

Our Waitrose (across the way in Cornwall) carries Libby's canned pumpkin.
As does our Waitrose in Romsey (near Southampton).
However, the recipe posted by Mrs Pink seems like it would be easy-and I bet tastier.

It'll stop dripping continuously. Give it a stir, and if it's similar in consistency to that in the can, then you've got it.

I roasted my pumpkin yesterday... cut it into slices spryaed with a bit of Pam like  spray put in about 1/4 cup of water and roasted it for 40 minutes at 185 ish and let it cool.  Peeled it (or scrapped off the skin) and put it ina colander to drain a bit... mashed is down and there you go.  I am going to freeze some for later this month for pie and make something else today.  I used two smaller "edible" pumpkins from Sainsbury's.  It really is quite easy to do an no one should have to go without pumpkin pie because they can't find it in a can.
