It really is quite easy to do an no one should have to go without pumpkin pie because they can't find it in a can.

I remember the first time I actually made pie and bread from a real pumpkin... it was a left over one from our Halloween Decor at the Language school in Poland I was working for.  I had no recipe....

I still don't know how exactly I did it but both were to die for and I did it with some pretty strange ingredients.... (people think the UK is hard.. try finding things in Polish and back then we were lucky if the sotres stocked anything with regularity!)  It could be worse people.  ;D

I think a lot of people are easily scared off at the thought of making things from scratch. It's rarely as difficult as you imagine!

Pumpkin cookies went  off very well.. even from BIL who  thinks  anything I make that he doesn't recognize..  'is fitlh'  or in his  accent  "filf" ;D ;D  THANK YOU  Mrs. Pink

so glad you liked them (or rather James liked them..)  What's not to like about pumpkin cookies?  Yum!

Marilu Henenr has a recipe in one of her  cookbooks  so i used  that one.. and I never have problems  with Dh  eating my food.. it's the rest  of the  out-laws  that stress me out.. We joke that  Jimmy Eat  world is  a suitable name  for  DH.. I  think I'm lucky though..  I wouldn't know what to  do with a picky  eater..

Too funny!!  I have one too.  I call him my garbage can.  He will eat anything that I put in front of him.  Except Borsch, which I love.  So I just don't make it for a meal.   My DH is the best person to cook for.

Amen to that...  my DH likes and eats what I make... so long as I have promised not to serve him burnt peas or burnt liver and onions... his mum's idea of cooking....when she could be bothered.

I had a look in my Fanny Farmer cookbook that I brought with me from the states and it said I could steam the pumpkin to make puree!  So I tried it and it seems to have worked well.  I used the steamer we got as a wedding gift but I imagine a steamer pan would work as well.  You just cut the pumpkin into large chunks, removing seeds and stringy bits (I found an ice cream scoop was great for that) and stemed about 2 lbs at a time for 45 minutes.  take off the skin and drain it and mash/blend it as in other recipes. 

Now to make the pie on Tuesday night!

I was inspired by this thread to try to make pumpkin pie from scratch including the pastry. It was perfect!!

Although, I didn't drain it after roasting it... didn't need to since after mashing I noticed it was the perfect consistency. Dry pumpkin? Roasted it too long?

I roasted the pumpkins seeds after too. Yum.
