lentils

Ive recently bought 2 kinds of lentils and split peas for a non-meat loaf recipe I tried out of Delia's Vegetarian cookbook (great book).  It was actually quite tasty!

Any suggestions for other lentil recipes?      [smiley=chef.gif]

Like some of the reviews say, I recommend spicing it up a bit, but the overall outcome is really nice and hearty.

I sometimes make a butternut and red lentil soup, with onions, garlic, cumin & coriander (powder). Mmmmmm.

Love lentils!  One way that I fix them is to make a soup/stew using lentils and barley (or brown rice).  Add onion, garlic, veggie stock (or chicken), a bit of celery, carrot....a very filling meal!
With red lentils I make a curry using sweet potatoes as well.  Fry up some onion, ginger, and garlic, with various spices (cumin, turmeric, curry, etc). Add lentils and water(or stock).  Let that simmer for about 15 minutes then add peeled and chopped sweet potato.  Simmer till sweet potato is cooked.

It was very yummy!  Perfect side dish, we just didnt feel like a big dinner tonight.  Id def make it again.  [smiley=chef.gif]

I added it to my epicurious recipe box. I'll have to try it. I trust your taste after falling in love with those healthy banana cookies!  :)

I make a lentil pie that I think is great, having it tonight actually.

Dice one onion and saute with 2-3 cloves garlic, 10 ml coriander, 5 ml cumin for 10 minutes.  Add 1 lb spinich to pan and let it wilt.  Add 2 cans lentils ( I use dried ones, so about half a pound) and mash lightly with a fork. Transfer to bowl and let cool a bit, then add 2 beaten eggs and 6 oz. crumbled feta cheese, 1 oz grated parmasean cheese and 4 tablespoons chopped fresh herbs ( I usually use parsley and mint.) and salt and pepper to taste.


Line baking dish with filo pastry, (8x10") brushing with butter between layers, make 6 layers.  Put in filling and cover with more filo.

Bake at 180/350/mark 4 for 40 min or so.
