I would suggest getting a bigger one than you think you might need because then you can do whole chickens or larger roasts in them.

I agree with this...  mine is just slightly too small for a large chicken.

I used to sometimes do crock pot meals sometimes when I was single.  It made for a good excuse to have friends over or make everyone at the office love me the next day--or I could always freeze stuff for later.

There's nothing like coming home from a long gruelling work day, walking in the door, and being hit by a home full of the scent of a great home-cooked meal waiting for you.  That's my favorite part of using a slow-cooker--opening the door and being hit by a wall of wonderful smells, knowing you won't have to work because dinner is all ready.

I couldn't agree more :) It's amazing that you know you don't have to do anything but plate the food up when you're back after a long day at work. Who could ask for a better way to cook?

Crock pots are the greatest kitchen appliance ever. There are so many different things you can make in them. Throw it in, turn it on and wait. What a great way to cook!!!

There have been a few recipes on here for whole chickens or chicken breasts/thighs whatever.  You can just add a bit of canned chicken broth or vegatable broth, some veg and some herbs and you're all set.  Just remember that the chicken, if you're doing a whole one, will create broth of its own as it cooks so don't start out with too much liquid in your pot.  You could also use bouillion cubes and water or just plain water as well.  I love to take the chicken broth that's left over and make chicken and noodles the next day with the left-over chicken and use the broth to flavor the noodles a bit.

Last night we used our crock and made this FAB thing:

2 chicken breasts
1 can diced tomatoes
1 packet taco seasoning
1 can mixed beans, drained

chuck it all in on crock on low for 4 hours.  Shred chicken with fork and stir before putting over salad (for me) or in wrap (for dave).  Top with creme fraiche and grated cheese.

HEAVEN.  and i used half fat CF and low fat cheddar so healthy!

That does sound delicious, and worthy of one of the 10 packs of Old El Paso taco seasoning I brought when I moved here. I know they sell the stuff here too, but I don't think it tastes the same as the stuff you get in the US.

I'm definitely making that this week.

That reminds me, I got a crock pot from an American who moved back home in May and I haven't tried it out yet.  I'll have to read through this thread!
