Smothered Breakfast Burritos

I have been having a real craving for breakfast burritos.  My problem is I have no clue how to make green chili... anybody have any good recipes?

You can get salsa verde as well as mole verde from MexGrocer.co.uk too (see the advert at the top of your screen!)  I have ordered from these guys a couple of times, and they're fab.

If someone said to me 'how do you make green chilli?'... i would think they were talking about chicken chilli, which i make with a green sauce instead of a red sauce, and white beans instead of kidney beans.

Not really sure what you mean, yankeeangel, but either way... you're killing me, cos im hung over and could really go a breakfast burrito!  ;)

I remember a green chili recipe that you brown up some chunks of pork, then make a roux with the pork grease & flour.  Then stir in water & green chilies to make up a gravy, & add the pork chunks back in the stew for awhile, seasoning salt & pepper, tinker with it as you like.  I can't give you anything exact & don't think I have it written down (it may be in a Tex-Mex cookbook - QG will know the one) -- but that's the jist of the recipe.  I think I saw the Frugal Gourmet do something like that once on TV, and I just remembered (generally) what he did.

We get jars of green chili sauce at the asian shops, I always use it when I make salsa. That would probably work, no? Easy enough to come by, anyway. At least for me!

diced chipotle chile
red leicester cheese

... and the crowning glory.... Jimmy Dean Country gravy!  ( i brought it back from my last visit to Texas).
