I baked triple chocolate chunk cookies last weekend, but they didn't last too long.   :P I think I will make something for us tomorrow, but not sure what. Maybe a Victoria sponge, since I have never tried baking a sponge cake before.  :-\\\\

Jamie's recipe is supper easy for the Victoria sponge, or this recipe is similar:

That recipe does look fab! Especially with some posh raspberry jam and fresh whipped cream. Yum! Only problem is that I only have one springform pan, although I have two regular cake tins, but they are a bit on the small side (not sure exactly what size they are... maybe 8", but not very tall). I wonder if I should try using the cake tins and just discard any extra batter that won't fit, or should I just pour it all in the one springform pan and then slice the cake in half to make two layers?  :-\\\\

Just baked some shortbread rounds and about to make some raspberry bakewell bars. Yummy.

I didn't like the shortbread recipe I used at all. Yuck! It called for semolina which seemed to make the shortbread all gritty and gross like sand between my teeth. I tossed those out to save my reputation so the family wouldn't blame the baker.  ;)  :P

But the raspberry bakewell bars are dreamy and then I baked some sweet potato and pecan bread. Yummy.  :)

These have a shortbread type layer on the bottom, a raspberry jam layer in the middle, then topped with an almond sponge cake and sliced almonds. Very tasty, I think! But I'm not sure which part you don't like, so you still might not like them. :P
