I made an apple pie yesterday, but it didn't turn out very well (live and learn... it will be better next time) so I dug the apples out of the ruined pastry and made a crumble instead. Yummy, and a good save, I think.  ;)

Jewlz, here you go!  It's actually a recipe I saw on the Food Network show "5 Ingredient Fix."  It's originally an Earl Grey Shortbread Cookie, but I didn't have Earl Grey tea on hand one day, so I used a fresh lemon instead and it came out stellar!

BTW, well done on the apple pie/crumble.  Sometimes the best things come from our mistakes.   :)

Ingredients
2 cups all-purpose flour
One lemon (zest and juice of half the lemon)
1/2 teaspoon salt
3/4 cup confectioners' sugar
1 teaspoon pure vanilla extract
1 cup (2 sticks) butter, room temperature

Directions
In a food processor (I use my standing mixer as I don't have a processor), pulse together the flour, zest, and salt, until the zest is mixed throughout the flour. Add the confectioners' sugar, vanilla, lemon juice and butter. Pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 1/2-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 30 minutes.

Preheat oven to 375 degrees F.

Slice the log into 1/3-inch thick disks. Place on baking sheets, 2 inches apart (2 probably needed depending on size of sheets). Bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.

If anyone wants to make the Earl Grey variety, then just use 2 tablespoons loose Earl Grey tea leaves instead of the lemon.  When I did the tea cookies, I used a couple of EG tea bags instead.  It achieves the same result...especially if you're like me and don't have a food processor.   ;D

Made my first Flag Cake yesterday for my American sister-in-law (a surprise for her on 4th July).  Did a plain Victoria Sponge (with a little lemon in the mix) and topped with some Raspberry Coulis (so that whole thing wouldn't be too sweet) the covered with whipped cream and did the flag with raspberries and blueberries.  It just vanished!!  Everyone said it was one of the best cakes I'd ever made - success!!

Mmmmm flag cake!  :)

I have two layers of coconut/vanilla sponge cooling on the racks right now.  Looks like one of the best cakes I've made since moving here - heh!  Always used the box mixes (Betty Crocker, Pillsbury, etc) when making cakes in the US.  Seems like I'm finally getting the hang of this baking from scratch using UK ingredients (different flour, different baking powder, etc) - well I remembered to leave the butter & eggs to come to room temperature first this time, so it wasn't lumpy - yay!

I'm doing a cake like my Grandma used to make (she would have used a mix though for the cake part).  But I'll do thick homemade coconut custard to go between the layers, then vanilla buttercream all of the outside, to which handfuls of coconut are stuck onto before the icing dries.

Should be sweet & delicious, I'm hoping!  :)

Peanut butter cookies and a FLAG CAKE.  HA!  I made a marble cake from scratch with strawberries and blueberries.  Yum.

That sounds absolutely yummy!  Mmmmm...my mouth is watering just reading about it!   :D

I'm still on a lemon kick.  Made lemon ricotta cookies with lemon glazing (the cookies are more cake-like).
