I made an apple pie yesterday, but it didn't turn out very well (live and learn... it will be better next time) so I dug the apples out of the ruined pastry and made a crumble instead. Yummy, and a good save, I think. 
Jewlz, here you go! It's actually a recipe I saw on the Food Network show "5 Ingredient Fix." It's originally an Earl Grey Shortbread Cookie, but I didn't have Earl Grey tea on hand one day, so I used a fresh lemon instead and it came out stellar!
BTW, well done on the apple pie/crumble. Sometimes the best things come from our mistakes.
Ingredients2 cups all-purpose flour
One lemon (zest and juice of half the lemon)
1/2 teaspoon salt
3/4 cup confectioners' sugar
1 teaspoon pure vanilla extract
1 cup (2 sticks) butter, room temperature
DirectionsIn a food processor (I use my standing mixer as I don't have a processor), pulse together the flour, zest, and salt, until the zest is mixed throughout the flour. Add the confectioners' sugar, vanilla, lemon juice and butter. Pulse together just until a dough is formed. Place dough on a sheet of plastic wrap, and roll into a log, about 2 1/2-inches in diameter. Tightly twist each end of wrap, and chill in refrigerator for 30 minutes.
Preheat oven to 375 degrees F.
Slice the log into 1/3-inch thick disks. Place on baking sheets, 2 inches apart (2 probably needed depending on size of sheets). Bake until the edges are just brown, about 12 minutes. Let cool on sheets for 5 minutes, then transfer to wire racks and cool to room temperature.
If anyone wants to make the Earl Grey variety, then just use 2 tablespoons loose Earl Grey tea leaves instead of the lemon. When I did the tea cookies, I used a couple of EG tea bags instead. It achieves the same result...especially if you're like me and don't have a food processor.
