Weeelllll, Nanaimo Bars are indeed lovely!  :D

I never have trouble eating my graham crackers straight from the box though, especially when I spread Nutella on them & make graham cracker/Nutella sandwiches, and a cold glass of milk to go with.  ;)

Hehe! I've been doing that, but with Skippy Honey Roasted Peanut Butter.  [smiley=smitten.gif]

Last night I baked some scones (had some buttermilk to use up) and baked my mum a birthday cake for her birthday today :D

Once again I used a recipe from my hummingbird bakery book - I used the lemon cupcake recipe and doubled it to make a proper cake. We're taking it round tonight I am very excited to try it.

Next I need to buy a pie dish to try Mississippi mud pie. I think I am getting a little baking obsessed!!!!!

Going to make cappuccino chocolate chip bread tomorrow and one more honey pine nut tart. Then maybe some cinnamon cupcakes next week.....

I was going to, but I ended up talking hubby into doing it for me yesterday - a chocolate beetroot cake.

(I know it sounds weird, but it's good - think along the lines of zucchini bread/cake, only with beetroot & chocolate.  Great way to get in your 5-a-day, with chocolate!)

Chocolate beetroot cake is delicious! My aunt made one once with homemade cardamom ice cream. To die for!

I didn't bake it, but I'm going to take liberties with this thread since it is a dessert (and most of the stuff here is dessertish). I made the most amazing vanilla ice cream ever. And, it's the perfect base for other flavors. Peaches are in season here so I'm thinking peach ice cream next!

I just baked some gingery gingersnaps (yeah, I know, kind of weird for the summer, but I had stuff I needed to use, including candied ginger), but they didn't turn out very well. Someone called and distracted me while I was measuring things out, and I accidentally used a little more oil than called for.

OMG, no, they are meant to be eaten and shared! The best thing about them is they are so simple and I have yet to meet someone who doesn't like them!  ;)
