Hehe... he is really sweet! He was blushing when he came to pick up his cake today.  [smiley=blush.gif] He is separated at the moment, so I'll keep you posted on his status, hinny (that's what he calls me).  ;)

Mrs. R - I adore Nigel but never liked his cake recipes. He's firmly in the British dessert camp and I know you and I aren't! 

I've had some other of his cakes that I've liked though - I make exceptions for some cakes on my British dessert rule.  ;)

Individual sticky toffee puddings with the most lush toffee sauce that was poured over the puds and then grilled for a few moments... mmmmm!

Gingerbread cookies...again.  There's loads.  I think I may be slowly turning into a gingerbread woman from all the cookies I've been eating.  ;)

Over the last week I've made chocolate chip, chocolate butter scotch, molasses, and cinnamon cookies.  This weekend I'm planning on sugar, gingerbread and maybe Hersey Kiss cookies.  Part of me wants something mint as well.

I might have gone a bit overboard.  My best friend was meant to have had her baby this week but at the very last minute was able to not have a c-section and wait until she goes into labor.  She mentioned to me that she was going to miss having a bunch of cookies around this year and I told her that I would help. 

Is banana bread hard to make?

I baked 72 sugar cookies and 12 of them burned. Too bad...I had to eat all of those ones myself.  ;)

No, its about the easiest thing in the world to make. There are many different recipes for it, and I've tried loads of them and never had one go wrong yet, so it's a safe bet. You can add chopped toasted nuts, or chocolate chips, or both, depending on how sweet you want it.

I baked 72 sugar cookies and 12 of them burned. Too bad...I had to eat all of those ones myself.  ;)

Hehe! You have to conceal the evidence!  ;)

I'm not a baker myself but my best friend is she is a fantastic baker/ cook!!  [smiley=chef.gif]  [smiley=2thumbsup.gif]  when she makes her banana bread she tried something new last year an now does it all the time. she roasts her bananas she said she uses less bananas cause somehow roasting 3 bananas the bread just as tasty as using 6 -8 bananas. I have her recipe I will post it on here all the ingredients are in American measurements. Hope you all like it!!  ;D  [smiley=2thumbsup.gif]  If I put this in the wrong place sorry!!

Roasted Banana Bread

2-3 Roasted Ripe Bananas

½ C Milk

1 Large Egg

4 TBS (1/2 stick) Butter Melted

2 C Flour

1 ¼ C Sugar

2 tsp Baking Powder

½ tsp Baking Soda

½ tsp Salt

¾ C Chopped Walnuts

Preheat oven to 400 degrees.  Place ripe bananas on cookie sheet lined with aluminum foil.  Cut a slit in each banana and bake in oven for approximately 15-20 minutes. The skins should be black and juices should be bubbling from slit.  Let bananas cool and remove from peal. Place bananas and juices in a mixing bowl. Blend in milk, egg, sugar and melted butter.  Mix in the dry ingredients until just mixed together. Fold in the walnuts. You can bake in loaf pans or as muffins, so baking time will vary. Bake on 400 degrees. I sprinkle the tops with a few chopped walnuts before baking.

That recipe shugga posted looks great, the only thing is, I'd add about a half cup more flour if you are in the UK, as the flour is different here. The roasted banana idea sounds great... I think I will try that next time! Thanks, shugga!

Chex mix is in the oven right now.  I have two over-ripe bananas that might become a small batch of banana bread muffins. 

I'd love to bake a kitchenful of Christmas goodies but DH thinks it's silly to buy all those cooking ingredients for the holiday season when it's just the two of us.  :-(   Most of what I bake I send to work with him to share but he's done tomorrow.  Next year I'll bake for a houseful of grandkids.  :-)
