I made the thinmint girl scout cookies from the IA thread, but I misread the recipe and used 1/4 cup of butter instead of 1/2 cup of butter and they came out like chocolate mint flavoured hard tack.  :\\\'(

^^^ oh dear! Dunk them in tea?

I made lemon poppyseed muffins at the weekend. It was only a small batch recipe (8 muffins) but it didn't involve any yoghurt and had a limited amount of sugar so they were PERFECT in my eyes (I hate that American recipes always tend to have excessive amounts of sugar in them! I can't even remember the last time I used all the sugar a baking recipe asked for... So yeah, I totally ignored the extra "glaze" in this recipe!!)

Or, could you put them in the food processor and use them to make a pie base?

I was going to do something similar as an ice cream topping, but pie base sounds good. The problem is that they're coated in chocolate so I'm worried about being gunky. But I bought more chocolate today so another batch may be baked in the near future.

Well, if they're going to go in the bin anyway, it's worth a shot. :) Oh, and you've made me really want thin mints now! ;D

I'll stick them in the freezer for now :o) We'll see if we can rescue them.

It's not technically baking, but I finally tried my hand at homemade sea salt caramels. Not too bad if I so say so myself. ;D
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

I made lovely vanilla cupcakes from the Hummingbird Bakery's recipe.  Iced with leftover chocolate ganache that I didn't end up using all of it for the birthday cake I made last weekend.  Decorated some with the Easter birds' nests (Cadbury Flake pieces & Cadbury mini chocolate eggs), some with chocolate curls & white chocolate 'spaghetti', some with sugar sprinkles, some with silver dragées.  Took them to a work friend's birthday party this afternoon.

I was very pleased with the results & people at the party thought I must have bought them somewhere & were surprised when they found out I had made them myself.  :)

Only thing is the Hummingbird Bakery recipe said it makes 12 cupcakes, so I doubled the recipe - thinking that would give me 12 for the party & then some I could send to work with DH on Monday, plus a couple for us.  I ended up with 15 cupcakes on a double recipe!  Hmmmm - are the Hummingbird Bakery's cupcakes teensy tiny or what?!  There were just normal size cupcakes - I bought the papers for them at Morrisons, so they weren't like some kind of big American monstrosities or anything like that, by any means.  I was very glad that I doubled the recipe or I wouldn't have even ended up with a dozen.

DH's photo of my Easter nest cupcakes was picked up & blogged yesterday, here.  :D

(I do wonder if those cupcake fan New Yorkers know that everyone & their dog & the shops & everyone makes those Cadbury nest cupcakes at Easter over here, but oh well.  We thought it was cool anyway.  ;))

Baked some bread this morning, and now I have a basic vanilla cake in the oven because I'm craving sweets and have none in!  I was desperate so I just made the recipe on the side of the bag of flour and put vanilla in.   :P  Hopefully it tastes good!

Last Monday, I made soda bread. As usually happens with my baked goods, it was too hard on the outside, not quite cooked through on the inside.

I hate baking.

Currently baking some cheese crackers from scratch.  Never done this before but they seem to be turning out ok.  I made them round like Mini Cheddars.  Can't wait to taste them!  :)
