I substituted the 1 1/4 cups oil with 1/2 cup sugar free pear puree, 1/2 cup non-fat plain yogurt and 1/4 oil and it is soooo good!

Does a no-bake cake count? ;)

Layer bottom of pan with sliced madeira cake. Mix broken meringues with creme fraiche and then spoon that alternately with lemon curd. Freeze 4 hours. Serve with red berry of choice.

On a bit of a bake fest today :)
Coffee Cake muffins
Blueberry muffins
Banana muffins
Cheese muffins - never had these before and thought what the heck have one egg left, some Monteray Jack cheese so I gave it a go.  Not bad, but I wasn't expecting them to as sweet as they were.
