When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

Apple and rhubarb crumble. It was my first time trying rhubarb and I would have been happy to leave it out. The apple and the crumble were good enough for me!

That sounds great, but I love rhubarb.

I made vegan peanut butter cookies.  Really yummy, but a bit too sweet (even though I used natural no-sugar pb).  Next time I'll use less sugar.

It was very good, but I can't justify eating it every day because I only get 22 points a day.  Luckily the kids and DH are eating it for me. ;-)

A chocolate espresso cake!
I refuse to answer that question on the grounds that I don't know the answer.

Angel cake in the UK is not the same as Angel food cake, so i just wanted to make that distinction.

A rhubarb crisp with cornish clotted ice cream (and cream for the other half...) Perfect dessert for a roast dinner.
