Now I need a good rice pudding recipe - I have left over coconut milk so want to do an Indian version with that and cardamom and cinnamon.
When I get home I can post the recipe I got from an Indian friend if you like. It just uses evaporated milk, but I'm sure you could sub coconut milk.

I also do a super-lazy version of Thai coconut rice sometimes: throw some cooked rice and coconut milk in a pan, add a little sugar, and heat. No measurements, just add things until it looks right. Throw some mango on top and it's heaven!

Ooo, and I made this rice pudding with lime and passionfruit a couple of weeks ago, and it was fab. I bet it would be even more brilliant with coconut milk!

Banana Bundt Cake:

2 1/2 cups unbleached white flour*
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon ground cardamom -- optional
3/4 cup brown sugar
2 egg yolks
1 cup lightly mashed ripe bananas
3/4 cup unsweetened applesauce
1/3 cup canola oil -- or veg oil
1 teaspoon pure vanilla extract
4 egg whites
* Preferably pastry flour
Preheat oven to 350F.
Prepare a 10" Bundt pan with cooking spray or a light coating of oil. Sift the flour with the baking powder, salt, nutmeg, and cardamom, if using, into a large mixing bowl. Add the brown sugar, mix well, and set aside. Combine the egg yolks, bananas, applesauce, oil, and vanilla and mix well. Add the banana mixture to the dry ingredients and stir just until evenly blended. Beat the egg whites until stiff but not dry. Gently fold the egg whites into the batter and pour it into the pan. Bake for about 60 minutes.

Don't know why, but I have been unsuccessful at finding applesauce in the UK.  Anyone know where I can get it?
I refuse to answer that question on the grounds that I don't know the answer.

Oh, I just make it. I take a few apples, bit of water and sugar and whizzy whizzy it. Easy peasy.

Chocolate chip cookies of the easy-to-bake variety.  It took enough effort to figure out how the oven worked.   ;D
