Cheat and use a blender on pulse  ;)  I swear that Nigella's sponge cake recipe is fool proof, and so easy, if you'd like to try again I'd happy to pass the recipe on.

I don't have a blender, my immersion one died. I'd like to try the recipe another time though.  :)
