What are you favorite healthy recipes?

Roasted veg (whatever is to hand) tossed in a very little bit of olive oil and a bit of sea salt with either low-fat haloumi or falafel and topped with low-fat houmus mixed with low fat creme-fraiche and toasted pine nuts. I could eat that every night, but dh isn't as keen.

We also eat a lot of grilled chicken with steamed veg. To make it more interesting I do a sauce with chicken breast and Jack Daniels reduced and mixed with a dab of low-fat creme fraiche and fresh pepper.

Also salmon dredged in a mix of paprika, cumin, and chili pepper and pan fried in a tiny bit of olive oil and served with mashed sweet potatoes.

And turkey burgers or turkey meatballs (essentially the same thing - mince mixed with breadcrumbs, an egg, and whatever seasoning is to hand) - the meatballs cooked in a tin of chopped tomato, a bit of tomato puree, a splash or two of red wine, and a stock cube and served over couscous.

We do chicken breasts, baked with a bit of Italian dressing. Not sure if you can get the same sort of Italian dressing in the UK, but it's just a oil & vinegar based dressing with a load of seasoning in it. We just marinate the chicken for about an hour or so in the fridge and then either wrap the chicken breasts in foil and put on a baking sheet in the oven or put them in a casserole dish with a lid and back for about 40 mins at 375 or so until they are really tender. The dressing add a lot of flavor, but not a lot of fat and makes the chicken super juicy and it just falls apart.

These days, that question is rather difficult to answer... and even as a pesce-vegetarian, I wonder if the stuff I make is healthy.  (Not much fat, but maybe too much salt... and who knows what's on the veggies.)

I love making and eating: vegetarian chili with cornbread.  Leek and onion soup.  Dhal and roti.  Grilled fish with salad and potatoes/steamed rice.   Mushroom pie with tons of parsley and garlic.  Ocha-zuki with homemade umeboshi.  I figure homemade pizza is healthy enough... but not sure.

I was just having a think about this thread and realised that it's really, really easy to equate healthy with low fat. But my new perspective (and the scale seems to back me up) is that non-processed is what's healthy.

I do pay attention to fat and use low-fat options with things like milk, creme fraiche, etc. but what I'm more focused on now is not eating pre-made processed foods. I still have my moments and about once a week we get lazy and eat pre-made ravioli or pizza, but for the most part I think if you stick with fresh ingredients and don't add loads and loads of fat and salt, you're automatically eating healthy.

I'd agree with that. And there are so much wonderful fresh veggies to be had in the UK! I love all the farm shops everywhere. And early asparagus is out now - so I'll be having that nearly every night until the season is over.

Mmmm. Asaparagus. And that's one vegetable that needs virtually nothing done to it - we had some last night and didn't even sprinkle it with salt 'cause it's SO good right now. Eating seasonally is so smart 'cause if something is fresh and in season it's 10 times tastier and doesn't need any sauce or butter or anything - a drizzle of really good olive oil at most!!

I love most things that are on Hungry Girl (hungry-girl.com).  I haven't moved yet, though it's definitely occurred to me that I won't be able to find a lot of her ingredients in the UK.  How sad, I'll have to completely reinvent my diet.  :\\\'(

a great site is my friend's site, which is almost all vegitatrian.  It's a US site so some of the products require substitutions but the recipies are SO GOOD.  I make her eggplant bake all the time!

i am eating leftovers from the BEST dinner and SO easy. Dave loved this!

Deseed and Bake spagetti squash (350 US for 1 hour), when done shred insides and put into bowl.

In a pan i cooked half an onion, half a red pepper and large chunks of zuchinni in olive oil. Threw in 2 turkey sausages cut up.  Cooked till sausage done. Combined with sauce and served over the spagetti squash

HEAVEN. I will make this probabally once a week and so good for you!

OK i just made this tonight and it was SO GOOD!!!  I just threw together some stuff I had in the house as i didn't make it to stop and shop in time!

I steamed a head of cauliflower (cut into large florets)

I had a large stock pan and cooked 3 sticks of cellery, 2 garlic cloves and 3/4 of a can of white beans until the cellery was soft. Chucked in 5 chicken stock cubes and about 6 cups of water. Set to boil.

When cauliflower was done i diced and added to soup. I strained most of the solids through a large spoon with holes and added into my miniprep cuisinart (all i have, i'd prefer to do it once but i did it about 4 times)

Added the pureed items back to the soup and let cook for another 10 mins. Added salt and ground pepper and OMG.
