Easter menu ideas?

I can't decide what to make for Easter - we like to have a nice breakfast and a late lunch. I'm thinking about a breakfast casserole and then for lunch ham, potatoes dauphinoise, peas, salad, and blueberry pie. But then again, if I can find local spring lamb, I might go for that...

I got some welsh lamb and baby carrots, baby asperagus and baby potatoes.

We're having eggs benedict for breakfast and therefore, we'll have lemon meringue pie for supper dessert.  That and  an apple pie.  We'll save some hollandaise sauce for the asperagus.

And chocolate.  Lots and lots of chocolate.

That sounds so good. I love hollandaise, but always forget to do it with asparagus.

We're doing steaks on the grill at my moms with baked potatoes, salad and probably a few others. I'm still trying to figure out what to make to bring for dessert.

We're not big Easter people, so we're not doing anything special. We may go bowling with dh's family. LOL.

Though now I'm craving a Lemon Meringue pie...   ;)

I always go to my aunt and uncle's house for Easter dinner. It's always spring lamb, which I don't eat, but I fill up on potatoes and veg. My favourite part is dessert, though. My aunt always makes Delia's chocolate trifle which is to die for!
