blueberries

I have just under 3 cups of formerly frozen blueberries to use up. Aside from muffins, anyone have any inspiring ideas for what to do with them?!

i'd freeze them again & save for the summer--they're lovely when it's scorching out, kinda like frozen grapes.

They've gone too juicy to refreeze, but I agree, frozen blueberries are great! Fortunately it's very easy for me to get them here so I can always go back and get more!

This one gets my vote, too! I looooove blueberry pancakes!

You could also make a trifle using blueberries instead of raspberries (or whatever you usually use). Epicurious has this recipe for lemon blueberry trifle which sounds to die for! (Though I'd cheat and use shop-bought lemon curd.)

Could you make a sorbet out of them? They are good just mashed in yoghurt too.  Or you could try making jam out of them.

One of my favorite recipes is for blueberry pot pies with sour cream ice cream. It's soooo good although a bit time consuming. Its from an old issue of Cottage Living magazine.

Lemon Ricotta pancakes are also really good with fresh blueberries.

here's another one:

use the blueberries to make a fruit salad.

pour plain or vanilla yoghurt over the top, drizzle with a copious amount of honey & sprinkle roasted hazelnuts on top.

i had this once at the elephant & castle in dublin & have since declared it the sexiest dessert on the planet. best eaten naked.   ;)

In a rolled up meringue (or meringue basket) with clotted cream.

Or a simple but nice blueberry cheese-cake like dessert.  Crumble some rich tea biscuits in a small dessert dish, add some Philly cream cheese (sweetened or not, your choice), then sprinkle blueberries on top.  The juicier the better.
