I've tried making it a couple of different ways and it never comes out quite right, Does anyone want to share their recipes and techniques?

Do you have a rice cooker?  Life is much better with one of those...

I don't add sugar, just a bit of vinegar.  I do add quite a bit of salt.  Fanning  seems to be important, but you can use a hand fan.  No need to fan a lot. 


What has been the problem?  There are loads of ways to screw up rice.  I know.  It could be old or poor quality rice, though.

You need to use short grain rice, you can get it in most supermarkets.  Most other kinds of rice don't stick together well enough.
