The bride is a veggie as is my MIL..but they have that already sorted themselves. She wants me to make something for us "carnivores" lol

I think will go with the fruit pizza but thank you for all the ideas...I knew the brilliant ladies of this forum would save the day!

The fruit pizzas were a HUGEEEEEEEE hit!!! Thanks very much for the idea....I made one with normal fruit...strawberry's, bananas, blueberries, and rasberries...and then made one with tropical fruit... ;D

Hubs liked them so much have to make another one today just for him....lol

For the summer I really enjoy making a banana pudding with a fluffy white merangue top. I used to make it in a large clear glass bowl and layer the bananas and nilla wafers.

uhm no...I was running around yesterday like a chicken with it's head cut off....I will take one of the one I am making for hubs...

I also made the wedding bouqet as well.  :-X she wanted something simple and that is what she got..........

What is your recipie for fruit pizza? Do you use cheese? And how do you keep the crust from getting soggy. It sounds so summery and fun, I'd love to try it.

Ok here is the recipe I used

BASE

1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

FILLING

1 (8 ounce) package cream cheese
1/2 cup sugar
2 teaspoons vanilla extract
and I put a dash of lemon juice in as well

and apricot jam (I did use this!) esp. over the bananas to keep it from turning brown

1. Preheat oven to 350 degrees F (175 degress C)
2. In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. Combine the glour, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan. (I bought a pizza pan with high sides for this)
3. Bake in preheated oven for 8 to 10 minutes, or until lightly browned.......COOL

4. In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
5. Arrange desired fruit in top of filling and chill!

And here is the one I made for my hubby last night....I think he would like me to make another one for today as we had guest last night and he got 1 slice of it!!!!

I just used up all the fruit I had left over from the ones I made for the wedding.

You missed the flour amount in your recipe!!

A variation on this is to add less sugar to the cream cheese (say 1/4c) and then glaze the fruit with a peach or apricot jam. Do this by melting the jam over low heat, strain out chunks if desired, and brush over the pizza).

Yummy!!!

how'd the potluck idea go down?  My sister tried to have one for her wedding and my mother absolutely put her foot down... i think it sounds like a stellar idea.
