Elynor, you don't have to do the regular pie crust, that's why there's the ability to crush cookies or crackers to make them! I love the Oreo crust, and there are also graham cracker crusts.  :)

i bring back the graham cracker crumbs... but i have used digestives here.  fine.

Or use gingernuts and melted butter for a gingery crust - great with lemon!

Hi.  My name is FunGirl and I hate pie.  Well... not completely true.  I hate pie crust, so that's pretty much hating pie.  I have NEVER met a pie crust I like.  Pie filling, yes.  Crust?  Blurgh.

And before you all start trying to convince me that I've not had a proper crust (you know you want to! ;) ), I really and truly have.  I've tried them all, including a good old-fashioned lard crust, handmade by someone's grandmother who has won more blue ribbons than I could count.  It just doesn't do anything for me.

However, I'm always happy to eat the filling! ;)

Even the crumbled biscuity ones? I mean, the ones that aren't pastry at all? And what about a pot pie - with no bottom crust and just a puff pastry lid?

Puff pastry is scrummy!  It's the all-encompassing, traditional pie crusts that I don't like.

I do like crumb crusts in small quantities, but they're pretty rich and sweet. I've always thought of them as a sort of "specialty" thing--it doesn't seem like they'd work with every pie filling.

My pumpkin cheesecake has a gingersnap and nut crust, and I'm definitely looking forward to making it with gingernuts this year--I think they'll be perfect! I LOVE the idea of lemon with it, though. Just like Carr's ginger-lemon creams (cremes?)! *drool*

I have a graham cracker recipe I can post if I can find it...I haven't tested it yet though.

Chary's Favourite Lemon Pie

6 oz ginger nuts, crushed fine
3 oz softened butter
7 1/2 oz double cream
2 lemons
1-7oz tin of sweetened condensed milk

Blend the crushed ginger nuts and the butter and press into the bottom and up the sides of a tart pan. Chill to set.
Whip the cream until stiff. Set aside.
Grate the zest and squeeze the juice of the lemons.
Fold the condensed milk into the whipped cream. Fold the lemon juice and zest into the mixture. Pour into the ginger crust.
Refrigerate at least 1 hour. May be frozen.
Decorate with whipped cream, lemon peel curls or crystallised ginger.
