i made a pie crust with cream cheese once. it was a cross btw pie & custard when it baked.  i pushed the crust into the bottom of the tart pan, then put sliced pears on top.  yummy.

i also make a choc mouse pie with coc chip cookies as the base.  but they're cooked first.

think the problem with cookie batter would be it not cooking?

There is no reason the cookie dough wouldn't cook, specially not if you blind bake it first.  I would have thought the problem would be that it is too sweet.  I was just curious because I've had some cookie dough in the freezer for a couple of weeks and the thought of using it for pie crossed my mind.

Maybe do a less-sweet filling, like dark, almost bittersweet chocolate or something more mild... like... umm...  ???

My husband would love that!  [smiley=laugh4.gif]  I don't like chocolate though.

I ended up making cookies LOL

Then I'll be the pie princess ;)

My specialty is pecan pie (every Thanksgiving).  My coworkers (at my previous COOL job) didn't know what hit them when they tried it  :o  (couldn't imagine pecans... in a pie....)
You're invited to my house for Thanksgiving, Pie Princess!!!  ;D

Oh, that's mean mentioning pecan pie.  I've been craving a good homemade one but haven't been able to find enough pecans for it.  Where did you find them so I can make a pie too?

I can probably find pecans, but where do you find the Karo syrup? ???

Oh that's an idea!  But doesn't that taste sort of molasses-y?  I'm wondering how golden syrup would be for it?

Harrods dahlings!!  Where else ;)

After my first Thanksgiving (HUGE nightmare; I casually thought I should host one for my new English friends the first year I was here, and FOURTEEN people decided to come), after near tears at Tesco, I thought, when in doubt, go to Harrods.  Four a mere £4.50, I got my Karo, and my pecans (can't remember how much they were per kilo!).

Then I learned.  At Christmas, I would go home, get a bottle of Karo, a bag of pecans from Trader Joe's, and stick the nuts in the fridge or freezer until November!

(hint:  use half dark karo and half maple syrup)
