I just bought a pastry cutter the other day, so I think I'll make some pie later this week.  :)

I bought one a couple of years ago, but have decided that hands are easily the best tool for pastry making.

Agreed.  I can't stand it how the butter always gets stuck between the pastry cutter's blades and won't come off unless you poke at it!

Hello!  I love Pie.  I mean, I really LOVE pie!  This thread is making me drool onto my keyboard. ;D  I'm still in France, the land of the tart, and let me tell you, tart is not pie.  It is good, but not pie.   

I voted for make my own with butter.  I always use my hands to cut the butter into the flour, same as with biscuits.  The first time I tried to make pie with my husband (who is French and a chef) I went into spasms because he was doing it all wrong. "What are you doing?  Stop, stop, stop!  Please step away from the dough, you're working it too much.  It has to just barely stay together."  Needless to say, he thought I was over-reacting a wee bit. :) 

But for me, pie crust is serious business, especially when I'm trying to make comfort food, which tastes like home.  If I'm making a tart or quiche, I just go to the store and buy "pate brisee" which is the French version of pie crust (and what poor honey was trying to do).  Otherwise, it is straight out of the Betty Crocker Picture Cookbook, just like I learned when I was little. 

Oh, and I almost forgot.  My first sentence when I was a baby?  "More Pie"! ;D ;D ;D

So after the encouragement from this thread, I decided to have a second go a making my own pie crust. It turned out fab!  ;D I did use the pastry cutter and I think that made a huge difference. I think I had just mixed the ingredients together with a spoon before.

I was going to do a lattice top crust for the cherry pie, but I had the dishwasher running and I really only have counter space right above it, so the crust was getting too sticky to stay there long.

DB was delighted with the pie, wanted seconds but felt too full. I told him that one of the joys of pie is it still tastes just as delicious if you reheat it in an oven.  ;D

Pastry is one of those things that turn out great sometimes and crappy other times even though you use the same recipe, method, etc.  That's been my own experience anyway.  For the lattice, I have a really cool gadget you just run over the pastry and it cuts it then all you do is stretch it and put it on the pie!

If you mean that it was getting too sticky as in = too hot, being over where the dishwasher was, bear in mind if it's getting too warm for the pastry -- you can stick it back in the fridge again for a bit to chill it, and then give it another go when it has cooled.

I doubt there's going to be any pie involved in my weekend (but you never know ;)).  I'd still like to read about if anyone else is making one though!

I'm going to make a pie this weekend and will try for making a crust. I have no idea what sort of pie, it'll all depend on what fruit I can find at the store, but I'm leaning towards a stawberry/rhubarb if I can find the stuff.
