Pie question for the experts....how cool does my blackberry pie have to be before I can cut it??

If you don't want it to run - very cool.  If you don't mind some of the filling running out, then you can cut it when it's warm.  I cut the last one warm, had two slices with gooey runny filling and then the rest cooled completely and the filling gelled up.

Oh boy!  :o Okay, I'll take it out of the fridge!

It turned out quite good, I thought.  It's the first pie I've made in a LONG time, although I seem to remember making a pumpkin one at Thanksgiving last year.  It was nice using the blackberries that DH picked.   :)

my favorite is my mother's rhubard custard pie.  tart & sweet & creamy.  my rhubards running amuck so i may jsut have to make it.  it's not summer without PIE.

Allright ladies, I made 3, count 'em 3 pies this weekend. An apple pie, a chicken pot pie and a chocolate truffle pie. No homemade crust though, leaving that for next weekend when I have a bit more time. The chcolate truffle pie turned out so rich you can only have a small sliver, but so yummy!

Pastry is one of those things that turn out great sometimes and crappy other times even though you use the same recipe, method, etc.  That's been my own experience anyway.  For the lattice, I have a really cool gadget you just run over the pastry and it cuts it then all you do is stretch it and put it on the pie!

Yeah, I've done a lot of baking and the same can also be said for making cake icings.

Oh, and I know what gadget you're talking about. I've seen those in stores. I was wondering how well it worked.

If you mean that it was getting too sticky as in = too hot, being over where the dishwasher was, bear in mind if it's getting too warm for the pastry -- you can stick it back in the fridge again for a bit to chill it, and then give it another go when it has cooled.

Yeah, that's what I meant when I talked about not doing the lattice because it was getting too sticky. I'll try to remember sticking it back in the fridge next time. The thought didn't even cross my mind.
