Tres Leches Cake

Has anyone made one of these cakes? I saw a nice recipe and I quite fancy it...

For the cake:
Vegetable oil
6 3/4 ounces cake flour, plus extra for pan
1 teaspoon baking powder
1/2 teaspoon kosher salt
4 ounces unsalted butter, room temperature
8 ounces sugar
5 whole eggs
1 1/2 teaspoons vanilla extract
For the glaze:
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
1 cup half-and-half

For the topping:
2 cups heavy cream
8 ounces sugar
1 teaspoon vanilla extract


For the cake:
Preheat the oven to 350 degrees F. Lightly oil and flour a 13 by 9-inch metal pan and set aside.
Whisk together the cake flour, baking powder and salt in a medium mixing bowl and set aside.

Place the butter into the bowl of a stand mixer. Using the paddle attachment, beat on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and with the mixer still running, gradually add the sugar over 1 minute. Stop to scrape down the sides of the bowl, if necessary. Add the eggs, 1 at a time, and mix to thoroughly combine. Add the vanilla extract and mix to combine. Add the flour mixture to the batter in 3 batches and mix just until combined. Transfer the batter to the prepared pan and spread evenly. This will appear to be a very small amount of batter. Bake on the middle rack of the oven for 20 to 25 minutes or until the cake is lightly golden and reaches an internal temperature of 200 degrees F.

Remove the cake pan to a cooling rack and allow to cool for 30 minutes. Poke the top of the cake all over with a skewer or fork. Allow the cake to cool completely and then prepare the glaze.

For the glaze:
Whisk together the evaporated milk, sweetened condensed milk and the half-and-half in a 1-quart measuring cup. Once combined, pour the glaze over the cake. Refrigerate the cake overnight.

Topping:
Place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick. Spread the topping over the cake and allow to chill in the refrigerator until ready to serve.

It is quite common in Mexican American culture. A funny story is that traditionally it also has a generous portion of alcohol. For my son's 5th b-day, his father ordered one from a family friend. It was absolutely beautiful. The parents start coming to him to complain...because the woman had made the fully leaded version...for a child's birthday! I think it was one of Sponge Bob's happiest moments.

It is a Nicaraguan dessert that has now caught on with most hispanics in the US.  It is very good and very, very sweet. I love it and have made it once or twice although it wasn't that recipe.  I learned to make it from a Nicaraguan neighbour back in Miami.  If you do make it, let us know how it turns out!

actually really popular in Costa Rica too - nicaragua's neighbor :) I had it for the first time while studying abroad there in 2000. Very yummy!

What would you substitute for Half and Half...I would use half milk/half single cream. Do you think that sounds reasonable???

I am intrigued with this recipe, it seems quite easy and I love to bake.

Have you ever had Salsa Lizzano from Costa Rica??? thats my ultimate bring back from the states item. I bring back 6 bottles everytime I go, and my mom brings it to me. I use it for EVERYTHING under the sun. Its the most delicious complex tasting sauce around. I love it.

oh WOW that takes me back  :D  I remember that stuff, great sauce, you need it down there that's for sure, so much of the food is a bit bland. I don't have any, but I would love to go back one day just to see it all again.

The times I made it, I used condensed milk, evaporated milk and regular whole milk.  I think you'll be OK if you use whole milk instead of the half and half.

i wanna try this- but first- racheee- how did this turn out?

and... can you get

in the UK?  i've never looked.

in the UK?  i've never looked.

Evaporated and sweetened condensed milk are readily available in the UK. I'm not sure what size tins they are, but you can easily convert.

I haven't had the time to make it yet! I have been so busy (being on the internet) at work, and home with my little busy boy! And my in laws are coming this weekend (nightmare) so hopefully I can make it next week sometime!!

I am so happy to get all these responses though!
