A poke cake! That is hilarious. Maybe my husband and I can make one sometime, perhaps for my birthday next week.

When I was little my mom used to help me make one of those for Christmas every year and then we passed it off as though I made it entirely. LOL. We used red jello on part of it and green jello on the rest and then topped it with Cool Whip (and I think we pricked it with a fork to make the holes).  :P Not sure I'd eat it with Cool Whip now but the rest of it sounds kinda yummy in a nostalgic way!

My mom used to make those!  Hmm... I think I may have to buy some Jell-O when I'm at the store today.

My mom used to make these. They were so good.

She also used to make a pecan pie with butterscotch pudding instead of Karo. I never liked that tho.

Q-G, I made that kind of cake for my grandfather's birthday one year.  One of the few pleasant memories I have of him...thanks for bringing it up.

And the cake tastes fab, by the way.

I used to make a rum cake like that, and just last week I made a lemon cake with a sugar/lemon juice topping that was made like that. But I do remember cakes with Jello Pudding in them from when I was a kid.

I don't think I'd like the Jello pudding version, but I like the idea of your lemon cake! That sounds great! Any chance of sharing the recipe?

I always poke holes in my Christmas cake and feed it with booze for a couple of months before it gets eaten!  ;D

I think I am turning dyslexic.  I keep seeing this thread & thinking the title reads 'Cake with A Holes'. :o

What a great story! My grandparents were mid-western farm stock so recipes like this (carrot jell-o salad and poke cake) are part of my mother's childhood as well as mine, too. I'm getting all nostalgic now! (and emailing the link to my mother)

i do a similiar thing when i make lemon poppy-sead pound cake.... poke holes and pour lemon/icing drizzle over top while warm.  it's like icing on the inside of the cake.  fab.
If you harbour bitterness, happiness will dock elsewhere.

I'd never heard of the Jell-o poke cake, but I have to say the updated version sounds FAB!!! Anything with lemon curd and mascarpone is good in my book...

My mom used to make a cake with canned fruit cocktail, of all things, that had holes poked in it and a sort of syrup--I think it had some butter in it as well--poured over. Soooo moist and yummy!
