New cake!

I made this cake for my sister's 8th birthday party today.  I was my first stacked cake.  There was a little girl that thought it was fake!  LOL

The bottom tier is a white almond sour cream cake with blackberry filling and the top tier is chocolate cake with blackberry filling.  My sister loved it and my family is impressed! :D

I'll have to admit that the decoration is not to my personal taste (though still extremely talented!!), but the cake itself sounds ABSOLUTELY WONDERFUL.  (blackberry filling...*drool*)

mine wasn't nearly as pretty as June's but i did one with blackberry filling a month ago, and it was extremely drool-worthy!

That cake is awesome.  Do you find the fondant difficult to work with?

Thanks for all the compliments guys!

Aless, it is not a cake I'd want for myself either.  It is a very child, girly kinda cake.  I'd want something a bit more grown up for me.

Elliejean, I did have trouble working with the fondant.  I've used storebought until now but that one was homemade.  It has put me off making my own fondant tbh!

My mom gave us some homemade blackberry jam a few months back and now I am eager to find something equally delicious to feed my blackberry love!

Nah, it's actually quite easy, here it is.

Blackberry Filling


2 16 ounce packages of frozen blackberries (not packed in syrup)
1 1/3 cups water
1 1/2-2 cups granulated sugar (or to taste. 2 cups will be pretty sweet)
5-6 T of cornstarch dissolved in 1/2 cup of water

In a saucepan combine the blackberries, water, and sugar. Bring to boil and simmer for 15-20 minutes or until the blackberries have broken down. Remove the mixture from the heat and strain with a fine mesh sieve to mash the blackberries. Combine the liquid and the solids in the strainer and return mixture to the heat. Dissolve the cornstarch in 1/2 cup of water. Whisk the slurry into the blackberry mixture. Bring the mixture back to a boil and simmer for 5 more minutes, stirring occasionally. Remove from heat and cool completely.

It is not my recipe and the original one called for ony the juices after straining be used but I used everything.  It made it thicker and you cannot feel the seeds in the cake.  It was delicious.

June...that is such a gorgeous cake! My 7 (almost 8) year old now wants that cake for her birthday (yeah right). What did you use for the frosting?
